n a recent article, the Christian Science Monitor reports that Central American farmers are turning away from organic coffee. Why? Turns out the market isn't as strong as it once was:

As for baking them in the muffin tin, I suggest using one that has a non stick lining. I had a difficult time getting them out, despite the amount of butter in the biscuit and greasing the pan.
